Salmon Ceviche

Serves 6
  • 600g (ca 1.30lb) of quality salmon fillet (preferably wild, otherwise organically farmed)
  • Juice of 2 limes
  • Juice of 1 lemon
  • Juice of 1⁄2 orange
  • 150g (1 cup) celery finely sliced
  • 3 spring onions, finely sliced
  • 1 chilli pepper (preferably jalapeño)
  • 1 ripe mango, diced
  • 1 bunch of coriander, chopped
  • Good quality extra virgin olive oil
