Salmon Ceviche
Serves 6
- 600g (ca 1.30lb) of quality salmon fillet (preferably wild, otherwise organically farmed)
- Juice of 2 limes
- Juice of 1 lemon
- Juice of 1⁄2 orange
- 150g (1 cup) celery finely sliced
- 3 spring onions, finely sliced
- 1 chilli pepper (preferably jalapeño)
- 1 ripe mango, diced
- 1 bunch of coriander, chopped
- Good quality extra virgin olive oil
