Rosewater Pavlova

- 500g (31⁄2 cups) blackberries 250g (1 cup) brown sugar
7 sprigs of thyme
500ml (2 cups + 2 tbsp) water 50ml (1/4 cup) rosewater - 7 sprigs of thyme
- 500ml (2 cups + 2 tbsp) water 50ml (1/4 cup) rosewater
- 210g egg whites (about 6 medium eggs)
- 240g (2 heaped cups) powdered sugar
- 15ml (1 tbsp) white wine vinegar
- 200ml (almost 1 cup) whipping cream
- 200g (11/5 cup) fresh blackberries for decoration
