Pig’s Trotters
Serves 2
- 2 pig’s feet with skin in place for each person 6 peppercorns
- 1⁄2 garlic head, cut across
- 1 carrot, diced
- 1⁄2 leek, chopped into small pieces
- Aromatic herbs: 1 teaspoon each of rosemary, basil, and thyme
- 1 onion, chopped
- Almond paste (a clove of garlic chopped, one spoon of breadcrumbs, two almonds, one small spicy bicho pepper).
- 1 tomato, grated
- A splash of stale wine
