Pig’s Trotters

Serves 2

  • 2 pig’s feet with skin in place for each person 6 peppercorns
  • 1⁄2 garlic head, cut across
  • 1 carrot, diced
  • 1⁄2 leek, chopped into small pieces
  • Aromatic herbs: 1 teaspoon each of rosemary, basil, and thyme
  • 1 onion, chopped
  • Almond paste (a clove of garlic chopped, one spoon of breadcrumbs, two almonds, one small spicy bicho pepper).
  • 1 tomato, grated
  • A splash of stale wine
