Pot Roast Half Pig’s Head

Serves 2

  • A dollop of duck fat
  • 8 shallots, peeled and left whole
  • 8 cloves of garlic, peeled and left whole
  • 1⁄2 pig’s head (we use Middle White, a rare breed, as half its head is perfectly sized for two people)
  • 1 glass of Calvados
  • A bundle of joy (tie together parsley stalks, thyme, rosemary, bay, and sage)
  • 1⁄2 bottle of white wine
  • Chicken stock
  • Sea salt and black pepper
  • A healthy spoonful of Dijon mustard
  • A bunch of watercress, trimmed
