Pot Roast Half Pig’s Head
Serves 2
- A dollop of duck fat
- 8 shallots, peeled and left whole
- 8 cloves of garlic, peeled and left whole
- 1⁄2 pig’s head (we use Middle White, a rare breed, as half its head is perfectly sized for two people)
- 1 glass of Calvados
- A bundle of joy (tie together parsley stalks, thyme, rosemary, bay, and sage)
- 1⁄2 bottle of white wine
- Chicken stock
- Sea salt and black pepper
- A healthy spoonful of Dijon mustard
- A bunch of watercress, trimmed
