Maris Pipers with Shallot and “Butter en Eek”

Potato
- 500g (ca.1lb) Dutch Maris Pipers (or similiar potatos) of the same size 1kg (41/3 cup) salted butter
Butter en eek
- 300ml (11/4 cups) gastrique
- Gastrique is caramelised sugar, deglazed with vinegar or other sour liquids, and used as a sweet and sour flavoring for sauces.
- 300ml (11/4 cups) fish stock
- 300ml (11/4 cups) whipped cream
- 300g (1 1/3 cup) butter
- 10g (21/2 tps) dashi powder
- 1 tablespoon (8g) of powdered sugar
Garnish
- 2 banana shallots
- 25ml tosa dashi vinegar
Finish
- A small bunch of chives
