Maris Pipers with Shallot and “Butter en Eek”

Serves 4

  • 500g (ca.1lb) Dutch Maris Pipers (or similiar potatos) of the same size 1kg (41/3 cup) salted butter

Butter en eek

  • 300ml (11/4 cups) gastrique
  • Gastrique is caramelised sugar, deglazed with vinegar or other sour liquids, and used as a sweet and sour flavoring for sauces.
  • 300ml (11/4 cups) fish stock
  • 300ml (11/4 cups) whipped cream
  • 300g (1 1/3 cup) butter
  • 10g (21/2 tps) dashi powder
  • 1 tablespoon (8g) of powdered sugar


  • 2 banana shallots
  • 25ml tosa dashi vinegar


  • A small bunch of chives
